Why use a Flavor Extract instead of a Flavor Concentrate?
Natures Flavors natural Flavor Extracts and Natural Flavor Concentrates are very similar. They are both all natural and water soluble Products. The main difference is that Concentrates have a cloudy/opaque look to them where as Flavor Extracts are clear. This property is due to the base that these Flavors are set in. So if your final application needs to be clear then we recommend a Flavor Extract. Flavor Concentrates are also more heat stable than extracts, so for baking you might want to look at concentrates instead of extracts. Furthermore, Flavor Extracts are in an alcohol base and will affect the freezing point of any application that you put them into, concentrates will not.

Flavor Extracts are Water Soluble?
Our Natural Flavor Extracts are pure Water Soluble Flavors, this means that like our Natural Flavor Concentrates these Flavor Extracts will readily dissolve into water based applications. We do not recommend adding Flavor Extracts to an oil base, as separation may occur. For Oil Based applications we offer Oil Soluble Flavors! Check our Natural Flavor Oils. If you are trying to flavor coffee, tea, or dried herbs we recommend you use our Natural Flavor Oils for Coffee and Tea .

What about Extracts in high heat applications?
It is important to note that flavors and colors will become less potent when exposed to high heat applications. Nature’s Flavors Flavor Concentrates are more heat stable than our Flavor Extracts, but we also offer Natural Flavor Emulsions for High Heat Applications!
