A legendary figure among chefs and gourmets, the famous French culinary author, racconteur and chef Auguste Escoffier can probably be credited with inventing much of what we know now as contemporary French cuisine. Known for simplifying and adapting the elaborate recipes that were served at kings' courts during the earlier centuries, Escoffier remained known as “the king of chefs and chef of kings". He is the one who invented, among other famous desserts, he invented the “Pêche Melba”, in honour of the Australian opera singer Nellie Melba, a flaming ice he dubbed the “Bombe Nero” and the delicious “Fraises à la Sarah Bernhardt” with pineapple and Curaçao sorbet. We at Nature Flavors feel very much inspired by Escoffier's creative and luxurious cooking style; and we believe that, with just a little bit of imagination, everyone can make up sumptuous and spectacular desserts fit for kings and queens. Meringue with Cherries and Caramel Flavored Coffee Syrup
3 large eggs
6 oz. caster sugar
8 oz. fresh cherries
4 oz. fresh redcurrants
10 fl. oz. whipped cream
4-5 tablespoons Natures Flavors Caramel Flavored Coffee Syrup
2 tablespoons brandy
Preparation of Meringue with Cherries and Caramel Flavored Coffee Syrup Whisk the egg whites to soft peaks; whisk in the sugar, approximately 1 oz. at a time, , whisking after each addition until all the sugar is in. Spoon the meringue mixture on to the prepared baking sheet, forming a circle about 8 inches in diameter. Then spoon round blobs next to each other so that they join up to form a circle all around the edge. Now, using the tip of a skewer, make little swirls in the meringue all round the edge, lifting the skewer up sharply each time to leave tiny peaks. Cook for an hour, at 275°F. In the meantime, remove the pits from the cherries; place the fruits in a bowl and pour the brandy over them. After the meringue cools, take it out of the pan and place it in a serving dish. Spread the whipped cream on top, add the fruits and drizzle generously with the Natures Flavors Caramel Flavored Coffee Syrup.
