Nature’s Flavors brand of potassium sorbate is 100% pure. It is used as a food preservative in beverages, canned foods, soups, fruit syrups, salad dressings, and any other liquid food product that is acidified. Nature’s Flavors sodium benzoate comes in two forms; as a pure crystalline powder and as a 25% solution in distilled water.
How to use:
A simple formula for 25% potassium sorbate solution: Measure 1 level and packed cup of potassium sorbate and add 3 cups of warm water. Stir until completely dissolved. Pour into a clean quart or gallon container. With these conditions the shelf life should be indefinitely.
To use for preservation of fruit, add 1 teaspoon of 25% potassium sorbate solution to 1 quart of fruit and juice. Cook to proper canning temperatures and used sterilized containers to support good safety procedures.
To test bacterial counts, send a sample to an outside lab as good insurance of a safe product for yourself and consumers that the recipe and potassium benzoate has functioned properly. Nature’s Flavors do not guarantee that your product will be preserved correctly.
Potassium sorbate can be used in conjunction with sodium benzoate for optimal preservative performance. Potassium sorbate, citric acid, and a 25% sodium benzoate solution can also be purchased in a combination solution.
